VINIFICATION: It snowed in the region in February and March. The vineyards showed a month of delay in their vegetative cycle when spring came. The weather warmed up in mid-April, but the temperature only really increased in late July, early August, when temperatures reached 42ºC. In the second half of August, the weather cooled and the rain fell for 10 days. During the harvest it also rained in the second half of September. The irregular climate of the year 1900 with some wines of great quality was a key starting point so that, after a careful selection, the aging process in the 550 and 600l casks would take place over a long period, further increasing the concentration and qualities this Harvest.
TASTING NOTES: With some depth in color, despite its age, it presents some amber / greenish reflections. Its aroma takes us on an endless journey, with well-marked smoke notes, accompanied by notes of roasted dry fruit and coffee. In the mouth stand out suggestions of plum and dried fig with some vanilla. The set is very
delicate and elegant. The finish is pleasant and ends endlessly. An unforgettable experience.
FOLLOW-UP SUGGESTION It goes very well with desserts based on nuts, eggs, caramel, vanilla or coffee. Cured cheeses are a good accompaniment. Slightly chilled, it can also be served as an aperitif and the combination of a new Colheita with “foie gras” is very interesting.
